Dinner can be a wild time of day. Especially if you have hungry children.
My best tip for beating the dinner crazies, is to prepare dinner early in the day. But, sometimes that is not possible.
On those nights, it’s important to have some quick and healthy dinners on hand so you can eat well without losing your mind (or resorting to an unhealthy option).
One meal I’ve been enjoying lately is this Chicken and Cabbage stir-fry. It cooks up amazingly fast and is delicious as well as satisfying without being heavy on carbs (which I like to avoid, especially in the evening hours).
I’ve been eating it as part of my Whole 30 plan (which I’ll be telling you more about soon).
Chicken and Cabbage Stir-Fry
Adapted from the Everyday Paleo Family cookbook
Ingredients:
- 1/4 cup coconut oil
- 2 lbs boneless, skinless chicken breast cut into bite-sized pieces
- 1 onion chopped or thinly sliced
- 1 head green cabbage shredded
- 2 tsp. caraway seeds
- 2 tsp. paprika
- sea salt to taste
- pepper to taste
Method:
In a large soup pot or wok, melt the coconut oil over medium heat.
Saute chicken and onions until browned.
Add cabbage and spices. Saute until cabbage is tender.
