Sorry for dropping off the face of the earth, we went on vacation and I assumed I would have access to the internet (as one would in this day and age, I mean it is 2012 after all) but alas I was mistaken.

So, here I am back from an ah-mazing vacation and ready to rock out the end of this year. Are you with me?
How are your holiday plans coming? Have you finished your christmas shopping?
I think I’m just about done . . . I think . . .
Ok so this weeks menu plan is a simple one for a few reasons –
1 – It’s hot
2 – I have jetlag
3 – Ive got holiday shopping and baking to do and I want to enjoy this, my all time favourite time of year 🙂
4 – Did I mention its hot?!

Menu Plan Monday –Â
Monday –
Dinner – From Eat, Live, Run – Creamy Kale and Mushroom Quesadillas served with salad
Tuesday –
Dinner – From Better with Cake – Low Carb Burgers
Wednesday –
Dinner – Lean Beef Burritos
Thursday –
Dinner – Grilled Fish and spinach salad served with home made Carrot “fries”
Friday –
Dinner – Garlic, lemon and rosemary grilled chicken breast served with baked sweet potato, and spinach salad
Saturday –
Dinner – Grilled chicken and Fajita vegetable salad
Sunday –
Dinner – From Better with Cake – Chipotle Steak Salad
Traveling to Idaho, USA tomorrow… AND when I get there we are having birthday dinner for 3 of us!!! My daughters are very supportive of the 20 pounds I’ve lost and say there’s a “ton” of veggies waiting for me!! I will be there for 3 weeks…I’ll count it a job well done if I can just maintain!!!!
