At last, at last its here at last. This week we are kicking off our Chalean Extreme Challenge and I am psyched!
Although I have no idea what is going on with the weather here in sydney at the moment? Is it summer? Is it winter? Make up your mind already!
So, how was your weekend?
We had a nice quiet uneventful weekend this weekend, I wanted to rest up good and proper to make sure I am ready to kick of this challenge with a bang.

Dinner – From How Sweet it is – Tilapia “Burgers” with Watermelon Salsa and baby spinach
Tuesday –
Dinner – From The Pioneer Woman – Bruschetta Chicken served with simple spinach and rocket salad
Wednesday –
Dinner – From Eat. Live. Run – Crock Pot Tex-Mex Lettuce Wraps
Thursday –
Dinner – From Better with Cake – Ranch Chicken Salad
Friday –
Dinner – From How Sweet it is – Sweet Potato Quinoa Cakes served with simple salad
Saturday –
Dinner – From Skinny Taste – Steak with Balsamic Tomatoes, carrots and green beans
Sunday –
Dinner – Roast Chicken served with Baked sweet potatoes, broccoli and corn.
I’ve made those sweet potato quinoa cakes before. My kids loved them as much as we did so I think we’ll have those this week too. Also on our menu is grilled pork chops and zucchini and whole wheat penne with roasted vegetables.
