You guys . . . what. A. Week!

Holy cah-razy weather batman!

Seriously, out. of. con. trol.

↑46’C (115’F) ugh no thank you. I for one am not a fan of hot weather. I love all the things summer brings, fresh fruit, trips to the beach, incredible salads, family BBQ’s, daylight savings and all those good things. The heat  . . . hmmm no thanks. I mean there are only so many layers you can take off to get yourself cool, am I right?

Thankfully we survived the intense heat unscathed and praise the Lord, it seems to be over with  . . . at least for the time being.

So what’s your plan for this week?

I plan to get the things done I skipped out on last week, you know . . .  while I had my head jammed in the freezer trying to keep cool.

Monday –

Dinner – From Closet Cooking – Chipotle Sweet Potato & Black Bean Quinoa Cakes with Creamy Avocado & spinach salad

Tuesday –

Dinner – Spaghetti Squash served with Grilled Chicken and oven roast tomatoes

Wednesday –

Dinner – From Better with CakeBest. Burgers. Ever served Low Carb style (aka in a lettuce cup) with baked sweet potato wedges

Thursday –

Dinner – From Eat. Live. RunPortobello and Summer Squash Lasagne served with garden salad

Friday –

Dinner – Grilled Fish served with roast cauliflower, baby spinach and oven roasted “carrot fries”

Saturday –

Dinner – From Better with CakeRanch Style Chicken served with baked sweet potato, baby spinach and corn

Sunday –

Dinner – Mushroom, spinach and Tomato Omelette served with garden salad
